I love Christmas, mainly for the food and family gatherings. Most years myself and Mum make our desserts from scratch. This year we had Mango & Chocolate Ice-Cream, Fruit Pecan Pie and Mince Pies, load it all up with custard and serve. The Ice-Cream was a little sickly, but I would make it again with less sugar. The Fruity Pecan Pie is addictive! As are the Fruit Mince Pies, I don't like the taste of store bought fruit mince pies and these are a fantastic alternative.
Of course we didn't eat only sweets for Christmas day, for lunch we made a cranberry and sour dough stuffed Turkey with a side of mango and greens salad then for dinner we made up Kilpatrick Oysters and peeled prawns dipped in a thousand island sauce - sides consisted of left over green salad and smoked ham.
